About this dish

Edikaikong comes from the Efik people of Calabar in south-east Nigeria and is famous for how many greens go into the pot. Fluted pumpkin leaves (ugu) and waterleaf are cooked down with palm oil, beef, shaki and stockfish into a deeply savory soup. Best with pounded yam.
